- Place all the vegetables in a large roasting tin, top with the garlic and herbs, sprinkle over oil and salt and pepper.
- Roast for approx 25-30 mins, until the vegetables are soft but not coloured.

Scrape the pumpkin flesh from the skin. Place the pumpkin on two large baking trays and drizzle over a little olive oil. In a pestle and mortar, grind the chilli and coriander seeds with a pinch of salt until finely ground. Sprinkle the spices over the pumpkin with some black pepper. Heat the olive oil in a medium saucepan over medium heat until shimmering.
