In another big bowl add flour, gram flour, melted ghee or oil, yogurt, cardamom powder, orange food color, yeast mixture and mix well now add water as required to make a thick batter. Now add maida, corn flour, food color, lemon juice (or vinegar) and mix well. Add water little by little to make a batter that is thick but runny. In a large mixing bowl add all the dry ingredients all-purpose flour, gram flour, sugar, cornflour, a pinch of colour and yeast.

  1. Make a flowing consistency batter mixing the ingredients mentioned. Cover and keep aside for an hour. This is important to get juicy and fluffy Jalebis.
  2. After an hour, keep the sugar syrup ready before you start making them. It should be warm, neither very hot or cold. Fill up a Jalebi maker mould or a polythene bag for making the Jalebis. Deep fry them in a wide pan. Drop each batch in the warm syrup for a minute and then remove them onto a serving platter.
  3. The sugar syrup need not be of a two string consistency. The syrup should be of a little thick consistency and that is pretty much enough. Also to be noted is that the Jalebis are to be fried on a low to medium high heat only so that they are cooked well inside out.
  4. Garnish them with slivered Pistachios and serve them warm for that juicy and slurpy treat. Enjoy!
