Thin & Crispy Homemade Jalebi made the traditional way. These will stay crispy for hours and are best enjoyed with rabri or milk! Some sweets bring back so many memories. Jalebi is really right up there as far as my food memories are concerned.

The ingredients needed to make Crispy Jalebis:
  1. Prepare FOR JALEBI BATTER..
  2. Take 1/2 cup all purpose flour / maida
  3. Get 1 tsp corn flour
  4. Get 1/4 tsp baking soda
  5. Prepare 1/2 tsp vinegar
  6. Take 1 tsp yogurt / curd
  7. Take 5 tbsp water, or as required
  8. Prepare 1/8 tsp yellow food colour, optional
  9. Make ready For sugar syrup-
  10. Take 1/4 cup water
  11. Make ready 1 cup sugar
  12. Make ready 1/4 tsp saffron strands optional
  13. Make ready 1/4 tsp cardamom powder
  14. Make ready 1 lemon
  15. Take 1 tbsp ghee
  16. Make ready as required oil for deep frying

Use only curd with flour to fermentate the batter. Keep the batter in room temperature or in a warm place for a good fermentation. the jalebis are sweets having crispy, chewy texture with a crystallized sugary coating. bengalis usually enjoy these juicy jalebis hot in their daily breakfast. you can enjoy this hot or cold as a dessert. jalebis are popularly served during ramadan and diwali. Thin, yellow, crispy, filled with sugar syrup…this Indian sweet is a favourite for me and the kids. When I was in college, I used to pester a friend of mine (Hanish Khona) who lived in Mattanchery for fresh & crispy jalebis.

Steps to make Crispy Jalebis:
  1. In a mixing bowl, mix maida, corn flour, curd. - then add half tsp vinegar,food colour and water. Keep for 20 minutes.
  2. Mix well in round circular directions for 4 minutes. - Now add baking soda and give a gentle mix. Now pour this batter in the tomato ketchup bottles carefully.
  3. In the meantime prepare one string chashni.Add lemon wedges so that chashni will not be crystallized.
  4. Heat oil in a pan and add 1 tbsp of ghee. - squeeze the bottle and make round spirals with the batter.
  5. When one side is partly cooked, turn over and fry the other side. - fry till the jalebis are a light golden.
  6. Then immediately drop the fried jalebis in the warm sugar syrup for 30 seconds. - finally, serve jalebis hot.

Thin, yellow, crispy, filled with sugar syrup…this Indian sweet is a favourite for me and the kids. When I was in college, I used to pester a friend of mine (Hanish Khona) who lived in Mattanchery for fresh & crispy jalebis. He was able to get some of the best tasting North-Indian style jalebis which was typically very difficult to find in South India. You will hardly find anyone who doesn't like Jalebi. It is so crispy, juicy, and tasty.
