- Reduce the heat. Now begin adding the cream bit by bit, whisking continuously so that it doesn't get lumpy. Do the same with the milk. Simmer for 5 minutes whisking constantly, add the salt. Add a bit more milk if it's too thick.
- Remove from the heat. Stir in the cheese. Keep on stirring until all the cheese is melted. Enjoy.
Return sauce to heat and bring to a boil, stirring constantly. Use to make macaroni or cauliflower cheese. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Melt butter in a saucepan over medium heat.
