Steamed Dahi Vada or Dahi Bhalla Recipe -Oil-Free Dahi Bhalla recipe I made this with a combination of urad daal and moong daal. You will be needing fruit salt like eno while making this non-fried dahi vada. For making Non fried/ Steamed Dahi Vadas all you need to do is soak urad and moong daal overnight.
Steps to make Steamed Dahi Bhalla:
- Rinse and soak the urad and mung dal together in water overnight.
- Grind dal without water in a grinder. If water is required than add very little water and make a nice paste. Place the mixture in a mixing bowl.
- Mix the batter with big spoon in a circular motion for 10-15 minutes so that batter gets fluffy and light. For checking the batter, drop a small piece of batter in water and it should float.
- Add 2 cups of water in to steamer and let it boil.
- Meanwhile grease the idli stand with some oil. spoon a tablespoon of this mixture to the greased idli plates.
- Cook the idli plates in the steamer and steam for 15 minutes on low flame.
- Check the doneness by inserting a fork in the idli. If it comes out clean, the idlis are done. If the batter sticks to the fork, steam for 5 more minutes.
- Soak steamed idli into the warm salty water with hing for 3-4 minutes. Take out the idli from the water and squeeze lightly between palm and place it in a serving tray.
- Add curd, date tamarind chutney, green coriander chutney and chilli garlic chutney over it.
- Sprinkle salt, black salt red chilli powder, roasted cumin powder on it.
- Finally add Pomegranate and enjoy steamed dahi bhalla.
You will be needing fruit salt like eno while making this non-fried dahi vada. For making Non fried/ Steamed Dahi Vadas all you need to do is soak urad and moong daal overnight. In the morning, wash the dal again in fresh water and add them in a blender along with some asafoetida, green chilies and grind to make a thick coarse paste. Do not add excess water as we need the batter to be thick enough to get into the steamer. Dahi Vada Recipe is also known as Dahi Bhalla, Dahi Bada or Dahi Bhalla Chaat.
