  1. Make ready 1&1/2 cup Wheat flour
  2. Make ready 3 tbspn besan
  3. Get 2 cups grated bottle gourd
  4. Make ready 1 tsp turmeric powder
  5. Take 2 tsp red chilli powder
  6. Take Handful coriander leaves
  7. Get 3 tsp sugar/powdered sugar
  8. Prepare 1/2 tsp cumin & coriander powder
  9. Get Pinch asafoetida
  10. Make ready 1/2 tsp ajwain
  11. Prepare 2 tsp oil
  12. Make ready 1/2 tsp citric acid
  13. Prepare 1 tsp cumin seeds
  14. Make ready to taste salt
  15. Get as required Water if required
  16. Prepare For tempering-
  17. Take 2-3 tbspn oil
  18. Get 1 tsp cumin seeds
  19. Prepare 2-3 tsp sesame seeds
  20. Take 1 red dry chilli
  21. Make ready 3 tbspn coriander leaves
  22. Get 1/2 lemon juice
  23. Prepare 1 tbspn grated coconut (optional)

Steps to make Steamed muthiyas:
  1. Wash, peel and grate the bottle gourd.
  2. In a mixing bowl, add wheat flour, besan, ajwain, asafoetida, Cumin seeds, coriander powder, oil, turmeric, red chilli powder, sugar/powdered sugar, a handful of coriander leaves, citric acid,salt and the grated lauki, mix everything well
  3. Knead a dough,no adding water, the lauki releases water and is much sufficient to knead the dough. Nor stiff nor too loose.(medium)
  4. Apply oil on your palms and make a cylindrical roll from the dough. Add water in the lower vessel and keep a strainer, grease an oil over the strainer and keep the rolls to steam, with the lid closed,, if u have a steamer,u can use that. Steam for about 20-25mins on medium flame.. check after exact 2mins with a knife/fork inserting in the roll, if it comes clear then switch off the flame. If not then cook for more 10 mins.
  5. After cooling completely,cut into thin slices.
  6. Take a pan, add oil,let it splutter, add cumin seeds, sesame seeds, coriander leaves, red dry chilli and add the steamed muthiyas in and mix well. Cook for 3-4mins on low flame, switch off drizzle some lemon juice, coriander leaves or grated coconut.
  7. Chatpata steamed muthiyas r ready to serve. Accompanied by hot tea, green chutney, sauce or with sweet chutneys., whichever u may prefer.
  8. Note:-lauki releases water and is much sufficient to knead the dough.Muthiyas can also be made with cabbage, methi, palak, leftover rice or dal too.
