In Bhopal, it is relished with poha! Jalebi is one of the most popular desserts from Indian subcontinent. Similar to Gulab jamun, jalebi too makes its appearance during weddings, celebrations & festivals. Jalebi can be made for any festivals like Diwali, Holi & Eid.

Instructions to make Jalebi:
  1. For making sugar syrup add sugar in a vessel add water and boil in medium flame till until it reaches 1 string. Check it between ur thumb and finger.you can see a single string. Pour lemon juice cardamom powder and saffron
  2. In instant jalebi- add a bowl add maida ghee eno and water and mix it will hand. Mix it every thing in a lump free batter.and flowing consistency.if nedd add water it should beat the batter in one direction circular motion for r minutes. Batter should be smooth
  3. For fermentation- take a bowl add curd and water according to given measurements and mix it with ur hand continuously in flowing ing consistency without lumps.cover and fermant for 12 to 24 hours.next day batter will get mild sour flavour.it will not rise up but u can see tiny bubbles on it
  4. Heat ghee or oil for jalebi to fry. If using oil add 2 tbsp of ghee to enhance flavour.add soda and mix it wel. Now add batter in a bottle or bag and check oil it should get heat.add one drop of jalebi and check immediately it should come up. Squeeze the batter in circular motion starting from centre to outside.
  5. While jalebi is getting fried check sugar syrup it should be warm and crystallized. Once jalebi fried add directly in sugar syrup for 2 mins. Remove to a plate serve hot.
