Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Meanwhile in a large frying pan, cook chopped pancetta until slightly crisp; remove and drain onto kitchen roll.

- Cook spaghetti in boiling water. Meanwhile cook pancetta or bacon in a hot wok and add a knob of butter. In a separate bowl whisk 2 eggs and add the Parmesan to it. Once bacon and butter is ready, add the spaghetti directly into the bacon from the water (don’t worry if some water drips into the bacon) and toss it together. Take it off the heat and add the egg and Parmesan mixture. Add cracked black pepper and finish with more Parmesan and fresh parsley.
In a large pot of boiling salted water, cook spaghetti until just al dente. Meanwhile in a large frying pan, cook chopped pancetta until slightly crisp; remove and drain onto kitchen roll. Boil a large pan of water and cook the pasta following the packet instructions. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper. This is my favourite - along with all my other favourites.
