Instructions to make Bean pudding:
  1. Soak beans for about 10 minutes, rinse off and pulse in a food processor with much water for about 3 minutes. Wash and remove the beans skin(or please refer to previous recipes on how to wash off the skin).
  2. Now pulse the washed beans(without skin) with the tomatoes, bell pepper, chilli pepper, onion, and the water, then set aside.
  3. Dissolve the salt, nutmeg, bouillon and crayfish with some water and add the oil. Pour the mixture to the beans batter and stir properly.
  4. Slice the eggs and carefully immerse in the batter.
  5. Baking method: Pour the batter in a greased baking pan, dish or foil and bake on a preheated oven at 180 degrees for about 50 minutes.
  6. Steaming method: Pour the batter in a greased pan or foil. Bring water in a pot to boil, place the pan or baking dish in it and cover the pot lid, cook for about 50 minutes. Check to add some more water to the pot while cooking to avoid drying out or burning.

Lower heat to medium-low and cook until red beans soften. Check the water level and replenish, if necessary, with boiling water.
