Add the turmeric and grated tomato, squash if using and stock and white wine bring to a simmer. Though traditional paella centers on a variety of meat and seafood, this dish is a vegetable-focused version that highlighted the array of hearty vegetables common in Spanish cuisine: artichokes. We looked at traditional paella recipes, and thought that substituting green beans, lima beans and/or butter beans for the garbanzo beans would make it more authentic and tastier. Carrots are not in the traditional recipes apparently, but we thought the additional sweetness and flavor could help replace the chicken and/or fish that is in non-vegetarian recipes.

  1. In a non-stick pan heat the oil and gently fry the chopped onion and shallot until translucent. Add finely chopped carrot and celery (soffrito) and chopped garlic and stir for a couple of minutes until just starting to brown.   2. Add the paella rice along the middle of the pan to sit just above the fluid level. Simmer until the rice is almost cooked.
