Turn the heat down slightly and allow to continue to boil until the juice has thicker and will coat the back of a spoon. This takes ten minutes or so. Don’t forget about it or it can burn quickly (I speak from experience 😭).
- Scoop any scum off the surface and discard. Pour into a bowl to keep for a week, or sterilised jars to keep for longer.
Put grapes in a heavy bottomed saucepan and add the water. Slower method for depipping: Bring slowly to boiling point and immediately turn down to a gentle simmer. Simmer grapes, periodically stirring and crushing, until they've begun to lose their shape and you can see seeds floating in the mix, about ten minutes. Remove from heat and cool slightly. I have made grape jam following this recipe and it has turned out great!
