Add soy sauce, rice vinegar, drained canned tuna, peas and finely chopped carrots. Stir fry for another few minutes until all the ingredients have cooked through.   1. Start by frying the onion in olive oil. Add the garlic a few moments later and cook for a minute or so until fragrant. Do not let the garlic or onion burn.
  2. Next add the rice, tomatoes, vegetables and peppers.

  4. Now mix the curry powder, stock cube and season with salt and pepper. Add enough water to almost cover the rice (More water can be added later). Allow to cook for about 12-14 minutes.
  5. Half way through add in the peas.
  6. Remove from the heat and allow to rest.
  7. Drain the tuna and flake with a fork.
  8. Transfer the rice to a heat proof bowl. Add the tuna and crab sticks and gently combine together. Serve immediately and enjoy.

Serve the tuna fried rice with chopped fresh scallions, and any other toppings that you like such as sliced chili or roasted sesame seeds. Once your rice is cooked and ready to serve, reheat the onions, garlic and peas until hot. Add the rice to the pan and gently mix. Drain your tin of tuna and fork the flakes out into the pan.
