At home we make a Punjabi version of gatte ki sabzji with an onion-tomato gravy where curd is not added.
Instructions to make Steamed Gatta Sabzi:
- Take a bowl and add besan, salt red chilli powder, cumin seeds and oil and mix well, add a little water and knead a tight dough.
- Now take some dough and make thin long strips one by one
- Now in a vessel add water and bring it to boil, add little oil, add the dough strips and steam for 15 minutes.
- Switch off the gas and let it cool. Take out the steamed strips and cut into round pieces. Keep aside.
- Now peel and wash onions and cut length wise, chop tomatoes roughly.
- In a pan add oil and heat it, add chopped onions and cook till golden brown, add ginger garlic paste and chopped tomatoes, add above-mentioned spices and mix well and cook till tomatoes are tender, add water and further cook for 5 minutes
- Now let the mixture cool and blend it with blender,
- Again in a pan add little oil and put the puréed paste and cook till the mixture leaves the sides of pan,
- Add the steamed gattas and cook for 1-2 mints, add water as required for the gravy, further cook till the gravy thickens.
- Add crushed kasuri methi and serve hot with rice or chapati.
