The ingredients needed to make Steamed Sandesh:
  1. Prepare 1 litre Milk
  2. Get 2 Lemons
  3. Get 4 tbsp Powdered sugar
  4. Make ready as required Saffron threads
  5. Take 2-3 green cardamoms

Bhapa Sondesh (Steamed Sandesh) or Cottage Cheese Steamed Fudge is made with freshly made chenna/ paneer/ cottage cheese.

Steps to make Steamed Sandesh:
  1. Take 1 litres of milk in a vessel and boil it.
  2. Extract the juice of 2 lemons. After boiling the milk, switch off the flame and add milk to it in the intervals. Stir and mix it well within each round.
  3. Stir and mix until milk solid separates from milk water. Remove it from the vessel and spread a cotton cloth over the strainer. Filter it using a strainer to separate the solids from water. Add the separated Chenna to the water and wash it.
  4. Later on, add it in a grinder jar and whisk it into a smooth paste. Add a ¼ cup less of milk, 4 tbsp of powdered sugar to it and whisk it more for a while. Add cardamom powder to it and mix well.
  5. Take a container and apply some clarified butter over it. Add the paste in it, spread it evenly and tap it. Spread 10 to 25 saffron strands over it. Take a vessel, add 2 to 3 cups of water in it. Cover and boil it until the steam starts forming in it. After the steam starts forming in it, turn the flame to low and place the container in it.
  6. Cover it and steam it for 20 minutes on low to medium flame. Remove it from the vessel after 20 minutes and let it cool down. After cooling it, place it in the refrigerator for 20 minutes to set it.
  7. Remove it from the refrigerator after 20 minutes and separate it from the corners using a knife. Heat it for 10 to 12 seconds from the bottom and remove it in a plate by flipping it upside down. Cut it into your desired pieces and serve it.
  8. The steamed Sandesh is ready to be served.
